Sweets-tooth
Oatmeal cookies are possible without butter and eggs. Don't let the public fool you. They can still taste good- Here's the rough outline.
3c oatmeal quick or old fashioned
1 1/2 c brown sugar-packed
1-1/2 c self-rising flour (add up to 1/2c more if needed to soak up excess milk)
2T cinnamon
1/2c oil (I used olive)
2c raisins (I would soak them first to plump instead of dried)
2c of milk
Ended up putting in a couple of quick pours more of milk and three or four hands of flour i.e. putting a clean hand in the flour and making a fist of what you can hold. I made it a little too thick this way.. I would maybe add two handfuls tops.. needs to be a little thicker than cake batter texture. But NOT near as thick as dough. That will take too long and be very dry.
Grease and lightly flour or non-stick coat a 9x13 pan.
Mixed and layered bottom of 9x13 pan 1/2 deep to make bars.
I set the oven for 350 and the first batch took almost 40 minutes to get done.
Second batch was 4 jumbo drop cookies at 400, took 25.
Third batch was more bar cookies at 380 and took less than 30 to make.. maybe twenty.. I don't remember. But that was two hours of my day on the Fourth of July. They're almost all gone now...
